Ingredients
- 1 lb. ground beef
- 1/2 c. fresh bread crumbs
- 1 egg
- 1 tsp. salt
- oil
- 2 c. water
- 1 c. uncooked rice
- 2 large carrots, quartered
- 1/2 c. chopped green pepper
- 1/4 c. chopped onions
- 1/2 lb. Velveeta cheese, cubed
Method
- Combine meat, bread crumbs, egg and salt; shape into 18 meatballs.
- Brown in small amount of oil on all sides in a large skillet.
- Drain.
- Add water, rice, carrots, green pepper and onions.
- Cover and simmer 25 minutes.
- Add Velveeta.
- Heat until Velveeta melts.
- Makes 4 to 6 servings.
