Ingredients

  • 1/2 cups Butter, At Room Temperature
  • 1 cup Sugar
  • 2 whole Eggs, Separated, At Room Temperature
  • 1 teaspoon Vanilla
  • 1-1/2 cup Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoons Salt
  • 1/2 cups Whole Milk

Method

  • *Preheat oven to 350 degrees. Line cupcake pan with liners.
  • *In a large bowl cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  • *Add the egg yolks, beating well.
  • *Mix in vanilla.
  • *In a separate bowl, combine flour, baking powder and salt.
  • *Add the dry ingredients to creamed mixture, alternating with the milk. Mix well.
  • *Beat egg whites until stiff peaks form.
  • *Gently fold egg whites into the batter using a rubber spatula.
  • *Fill cupcake liners 1/2-3/4 full.
  • *Bake for 20-25 minutes.
