Ingredients
- 1/2 cups Butter, At Room Temperature
- 1 cup Sugar
- 2 whole Eggs, Separated, At Room Temperature
- 1 teaspoon Vanilla
- 1-1/2 cup Flour
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1/2 cups Whole Milk
Method
- *Preheat oven to 350 degrees. Line cupcake pan with liners.
- *In a large bowl cream together the butter and sugar until light and fluffy, about 3-5 minutes.
- *Add the egg yolks, beating well.
- *Mix in vanilla.
- *In a separate bowl, combine flour, baking powder and salt.
- *Add the dry ingredients to creamed mixture, alternating with the milk. Mix well.
- *Beat egg whites until stiff peaks form.
- *Gently fold egg whites into the batter using a rubber spatula.
- *Fill cupcake liners 1/2-3/4 full.
- *Bake for 20-25 minutes.
