Ingredients

  • 3 slightly beaten eggs
  • 1 (17 oz.) can cream-style corn
  • 1/4 c. milk
  • 1 Tbsp. instant minced onion
  • 1/8 tsp. pepper
  • 1/2 c. long grain rice, cooked (1 1/2 c.)
  • 1 (12 oz.) can luncheon meat, cut in 3/4-inch cubes
  • 1/2 c. cubed American cheese (2 oz.)

Method

  • Combine eggs, corn, milk, onion and pepper; stir in rice, meat and cheese.
  • Turn into an ungreased 10 x 6 x 2-inch baking dish. Bake at 350° until a knife inserted just off center comes out clean, 45 to 50 minutes.
  • Let stand 10 minutes before serving.
  • Cut into squares.
  • Makes 6 servings.
