Ingredients

  • 1 c. sifted all-purpose flour
  • 4 tsp. baking powder
  • 1 c. corn meal (yellow)
  • 1 c. milk
  • 1/4 c. sugar
  • 3/4 tsp. salt
  • 2 eggs
  • 1/4 c. soft shortening

Method

  • Sift together in bowl the flour, sugar, baking powder and salt.
  • Stir in corn meal.
  • In a small bowl,
  • beat eggs, milk and shortening.
  • Add all at once to corn meal mixture.
  • Stir with fork until flour is just moistened.
  • Even if batter is lumpy, do not stir anymore.
  • Pour into well-greased 9 x 9 x 2-inch pan.
  • Bake in a 425° oven for 20 to 25 minutes, or until done.
