Ingredients
- 1 c. sifted all-purpose flour
- 4 tsp. baking powder
- 1 c. corn meal (yellow)
- 1 c. milk
- 1/4 c. sugar
- 3/4 tsp. salt
- 2 eggs
- 1/4 c. soft shortening
Method
- Sift together in bowl the flour, sugar, baking powder and salt.
- Stir in corn meal.
- In a small bowl,
- beat eggs, milk and shortening.
- Add all at once to corn meal mixture.
- Stir with fork until flour is just moistened.
- Even if batter is lumpy, do not stir anymore.
- Pour into well-greased 9 x 9 x 2-inch pan.
- Bake in a 425° oven for 20 to 25 minutes, or until done.
