Ingredients
- 1 1/2 lb. small beets (16)
- 2 Tbsp. honey mustard
- 3 Tbsp. cider vinegar
- salt and pepper
- 1/2 c. heavy cream
- 1 Tbsp. minced parsley
Method
- Wash and cut beet stems to within 2-inches of beet.
- Cook about 12 minutes or until tender.
- Cool and peel.
