Ingredients

  • 1 slice ham steak (1 1/4 lb.)
  • 1 can sweet potatoes, drained (16 oz.)
  • 2 Tbsp. apricot jam or preserves
  • 1 tsp. Dijon mustard
  • 1 can sliced peaches (16 oz.)
  • 2 Tbsp. maple syrup, divided

Method

  • Preheat broiler.
  • Position oven rack about 4 inches from heat source.
  • Place ham in shallow pan.
  • Surround with peaches and sweet potatoes; drizzle peaches and sweet potatoes with 1 tablespoon maple syrup.
  • Broil 5 minutes or until lightly browned. Meanwhile, heat combined jam and mustard in microwave until jam is melted; stir until well-blended.
  • Turn ham, peaches and sweet potatoes over; brush ham with jam mixture.
  • Drizzle peaches and sweet potatoes with remaining 1 tablespoon maple syrup.
  • Continue broiling 5 minutes or until thoroughly heated.
  • Serves 4.
