Ingredients
- 5 large eggs
- 1/2 lb. butter or margarine
- 1 c. sugar
- 1 3/4 c. plain flour
- 1/2 tsp. baking powder
- 1 lb. cherries
- 1 lb. pineapple
- 4 c. pecans
- 1/2 oz. vanilla
- 1/2 oz. lemon extract
Method
- Cream butter. Add sugar gradually and cream until fluffy.
- Add beaten eggs to mixture.
- Mix fruit and nuts with 3/4 cup flour. Sift remaining 1 cup flour and baking powder.
- Fold into egg and butter mixture. Add flavoring.
- Fold in fruit and nuts.
- Grease and line tube pan.
- Bake at 250° for 1 1/2 hours (or until toothpick tests clean).
