Ingredients

  • 5 large eggs
  • 1/2 lb. butter or margarine
  • 1 c. sugar
  • 1 3/4 c. plain flour
  • 1/2 tsp. baking powder
  • 1 lb. cherries
  • 1 lb. pineapple
  • 4 c. pecans
  • 1/2 oz. vanilla
  • 1/2 oz. lemon extract

Method

  • Cream butter. Add sugar gradually and cream until fluffy.
  • Add beaten eggs to mixture.
  • Mix fruit and nuts with 3/4 cup flour. Sift remaining 1 cup flour and baking powder.
  • Fold into egg and butter mixture. Add flavoring.
  • Fold in fruit and nuts.
  • Grease and line tube pan.
  • Bake at 250° for 1 1/2 hours (or until toothpick tests clean).
