Ingredients

  • 1/2 pounds, 1-1/4 ounces, weight Plain Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoons Salt
  • 3-5/8 ounces, weight Unsalted Butter, Softened At Room Temperature
  • 3/4 cups Caster Sugar
  • 1 cup Golden Syrup
  • 3 whole Eggs
  • 1 Tablespoon Grated Fresh Ginger
  • 1 teaspoon Cinnamon Powder
  • 3/4 cups Ginger Beer
  • 1 cup Walnuts, Coarsely Chopped
  • 1 cup Raisins

Method

  • Preheat the oven to 150°C.
  • Lightly grease a 9" round pan and line the base with parchment paper.
  • Sift together plain flour, baking powder and salt.
  • Beat butter, caster sugar and golden syrup until well mixed. Slowly mix in eggs, one by one. Add in ginger and cinnamon. Pour in half the flour mixture, mix until well combined. Add in all the ginger beer and mix well. Mix in the rest of the flour mixture. Lastly, mix in walnuts and raisin.
  • Pour cake batter into the greased baking tin and bake for about 1 hour 15 minutes to 1 hour 30 minutes or until a skewer comes out clean when inserted into the cake.
