- 1 lb. lean ground beef
- 1 egg, beaten
- 3/4 c. (2 1/2 slices) soft bread crumbs
- 1 3/4 c. water, divided
- 1/4 c. chopped onion
- 1/2 tsp. salt
- dash of pepper
- 2 beef bouillon cubes
- 1/3 c. brown sugar, packed
- 1/4 c. raisins
- 2 1/2 tsp. lemon juice
- 1/2 c. coarsely ground ginger snap cookies (9 or 10)
- cooked noodles
Method
- Combine beef, eggs, crumbs, 1/4 cup water, onions, salt and pepper.
- Shape into 1 1/2-inch balls.
- Set aside.
- In a large skillet, bring remaining water to a boil.
- Add bouillon cubes, brown sugar, raisins, lemon juice and ginger snaps.
- Stir until thoroughly combined.
- Add meat balls to skillet; simmer, uncovered, for 20 minutes or until meat is no longer pink.
- Stir occasionally.
- Serve over noodles.
