Ingredients

  • 2 Tbsp. olive oil
  • 1 1/2 tsp. grated lemon peel
  • 1 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. rosemary, crumbled
  • 8 red potatoes (about 1 1/2 lb.), quartered
  • 8 garlic cloves (unpeeled)
  • 4 medium red onions, quartered
  • 1 large red pepper, cut into 3/4-inch strips

Method

  • Preheat oven to 450°.
  • Combine oil, lemon peel, salt, pepper, rosemary, potatoes, garlic, onions and red pepper in large bowl; toss to coat well.
  • Spread in a jelly roll pan.
  • Roast 40 to 45 minutes until vegetables are tender.
  • Makes 4 servings.
