Ingredients
- 500 grams raw prawns, peeled
- 1 large clove garlic
- Olive oil
- Balsamico vinaigre
- 1 large ripe mango
- 1 to 2 ripe avocados
- 1 head crisp romaine or other robust green lettuce
Method
- Crush the garlic and toss it in a pan with two or three tablespoons of heated olive oil, cook until just fragrant. Toss the prawns in and saute for a minute or two on each side, until cooked through. Remove from heat.
- Slice the mango and the avocado lengthwise and into equal sized slices (about the same dimensions as each prawn.
- Put the mango and avocado in a bowl, pour the prawns with their juice and oil on top, and let sit for 20-30 mins so the flavours can mingle. Add a tablespoon or two of balsamico vinaigre, and toss all together.
- Chop or tear the romaine lettuce in a bowl, and then toss the prawn, mango and avocado mixture through and serve immediately.
