Ingredients
- 2 pounds boiling potatoes, scrubbed, peeled and quartered
- 3 cloves garlic, peeled
- tablespoons butter
- 23 cup skim milk
- Salt and freshly ground black pepper
Method
- Place potatoes and garlic in a heavy saucepan, cover with water, bring to a boil and simmer until the potatoes are just tender, about 20 minutes.
- Drain.
- Using a masher or ricer, mash the potatoes and garlic together.
- Stir in butter and skim milk.
- Season to taste with salt and pepper.
- Serve at once or reheat in the top of a double boiler.
