Ingredients

  • 2 pounds boiling potatoes, scrubbed, peeled and quartered
  • 3 cloves garlic, peeled
  • tablespoons butter
  • 23 cup skim milk
  • Salt and freshly ground black pepper

Method

  • Place potatoes and garlic in a heavy saucepan, cover with water, bring to a boil and simmer until the potatoes are just tender, about 20 minutes.
  • Drain.
  • Using a masher or ricer, mash the potatoes and garlic together.
  • Stir in butter and skim milk.
  • Season to taste with salt and pepper.
  • Serve at once or reheat in the top of a double boiler.
