Ingredients
- 1 qt. heavy cream
- 1 1/2 c. sugar
- 1 c. solid-pack pumpkin puree
- 1 vanilla bean, split lengthwise
- 1 cinnamon stick
- 6 whole cloves
- 2 (1/4-inch thick) quarter-size slices peeled fresh ginger root
- 8 large egg yolks

- Arrange 8 (6 to 7 ounce) ramekins in shallow baking pan large enough to hold them without touching.
