Ingredients

  • 3 c. flour
  • 1/4 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 3 eggs
  • 2 c. milk
  • oil (to fry cakes in)

Method

  • Mix dry ingredients.
  • Beat eggs until thick and lemon colored. Add milk and vanilla, then beat in dry ingredients until batter is fairly smooth.
  • Run batter into hot oil, using a slow wide circular motion and maintaining as steady a stream as possible.
  • Fry, turning once, until golden brown, about 1 to 1 1/2 minutes on each side.
  • Dust generously with powdered sugar.
  • Serve warm.
  • Makes 16 large cakes.
