Ingredients
- 3 c. flour
- 1/4 c. sugar
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1/2 tsp. salt
- 3 eggs
- 2 c. milk
- oil (to fry cakes in)
Method
- Mix dry ingredients.
- Beat eggs until thick and lemon colored. Add milk and vanilla, then beat in dry ingredients until batter is fairly smooth.
- Run batter into hot oil, using a slow wide circular motion and maintaining as steady a stream as possible.
- Fry, turning once, until golden brown, about 1 to 1 1/2 minutes on each side.
- Dust generously with powdered sugar.
- Serve warm.
- Makes 16 large cakes.
