Ingredients

  • 3 dried apricot halves
  • 1 dried pear half
  • 4 dried apple rings
  • 3 dried prunes
  • 4 tablespoons apple juice
  • 90 g (3 1/4 oz/1/3 cup) low-fat cottage cheese
  • 2 rice cakes

Method

1. Combine the apricots, pear, apple and prunes in a small saucepan with the apple juice.

2. Bring to the boil over medium heat. Cook for 5 minutes, or until all the liquid is absorbed. Allow to cool completely.

3. Arrange the cooled fruit in an airtight container with the cottage cheese. Wrap rice cakes separately to keep fresh.
