Ingredients

  • 5 large eggs
  • 1/2 lb. butter (no substitute)
  • 1 c. granulated sugar
  • 1 3/4 c. sifted flour
  • 1/2 tsp. baking powder
  • 3/4 lb. glace cherries
  • 1 lb. glace pineapple
  • 4 c. pecans
  • 1 Tbsp. vanilla
  • 1 Tbsp. lemon extract

Method

  • Cream butter and sugar fluffy.
  • Add well beaten eggs and blend thoroughly.
  • Chop nuts and fruits in medium pieces.
  • Mix with part of flour.
  • Sift together remaining flour and baking powder.
  • Fold into egg and butter mixture.
  • Add flavorings.
  • Mix, then add fruit and nuts, mixing well.
  • Pour into greased paper-lined tube pan. Place in cold oven and bake at 250° for 3 hours.
  • Cool.
