Ingredients

  • 1/2 cups Lightly Toasted Coconut Flakes
  • 5 whole Bananas
  • 1/2 cups Pure Honey

Method

  • In a small saucepan, lightly toast the coconut flakes, remove from low heat and set aside to cool down.
  • Once cooled, spread them out on a clean plate.
  • Peel bananas and on a clean work surface cut into 2-inch pieces.
  • In a bowl, add honey and, using a slotted spoon, add each banana bite to coat in honey, then coat in toasted coconut.
  • Repeat with each honey-coated banana bite.
  • Place each one on a parchment-lined large baking sheet pan or platter and place in the freezer.
  • After 12 hours, they will be frozen and can then be transferred to an airtight freezer safe container.
  • These are a favorite year round.
