Ingredients
- 1 1/4 lb. potatoes (3 medium to large), peeled and diced finely
- 2 Tbsp. vegetable oil
- 10 oz. chopped broccoli (fresh or frozen)
- 4 egg whites
- 4 whole eggs
- 1/4 c. grated Parmesan
- 2 Tbsp. minced fresh parsley or 2 tsp. dried parsley flakes
- 1/4 tsp. ground black pepper
Method
- In a large covered nonstick ovenproof skillet, cook potatoes in oil over medium heat, stirring once or twice, for about 10 minutes or until tender and lightly browned.
