Ingredients
- 2 c. 16 bean soup mixture
- 1 chopped onion
- 1 can Ro-Tel tomatoes and jalapeno peppers
- juice of 1 lemon
- 1 lb. ham
- 1 clove garlic
- salt to taste
Method
- Soak beans in water overnight.
- Drain next morning.
- Add 2 quarts of cold water; salt to taste.
- Add ham (cut in small cubes).
- Simmer 2 hours.
- Add onion, garlic, tomatoes and lemon juice.
- Simmer 2 more hours.
- Serve with cornbread or jalapeno cornbread.
