Ingredients
- 1 lb. medium shrimp
- 1/2 c. water
- 1 celery stalk, chopped
- 1 green pepper, chopped
- 2 large carrots, pared and grated
- 1 Tbsp. chopped parsley
- 4 Tbsp. mayonnaise
- salt and pepper
- few drops Tabasco sauce
- few drops lemon juice
Method
- Place shrimp and water in 12 cup casserole. Cover and microwave 4 minutes.
- Remove casserole from microwave and let stand 2 minutes on counter, covered.
- Drain shrimp and cool under cold running water.
- Drain well.
