Ingredients

  • 2 teaspoons butter
  • 1 medium onion, chopped
  • 12 lb mushroom, chopped
  • 1 cup chicken broth
  • 1 12 cups skim milk
  • 14 teaspoon thyme
  • 14 teaspoon salt
  • 18 teaspoon pepper

Method

  • In a large nonstick skillet, melt butter over medium heat.
  • Add onion and cook until softened, but not browned, about 3 minutes.
  • Add mushrooms and cook, stirring, 3 minutes longer.
  • Scrap onion and mushrooms into a food processor or blender.
  • Add chicken broth and 1/2 cup milk and puree until smooth.
  • Return to saucepan.
  • Add remaining milk, thyme, salt, pepper and nutmeg.
  • Simmer 5 minutes.
  • Serve hot.
