Ingredients
- 2 teaspoons butter
- 1 medium onion, chopped
- 12 lb mushroom, chopped
- 1 cup chicken broth
- 1 12 cups skim milk
- 14 teaspoon thyme
- 14 teaspoon salt
- 18 teaspoon pepper
Method
- In a large nonstick skillet, melt butter over medium heat.
- Add onion and cook until softened, but not browned, about 3 minutes.
- Add mushrooms and cook, stirring, 3 minutes longer.
- Scrap onion and mushrooms into a food processor or blender.
- Add chicken broth and 1/2 cup milk and puree until smooth.
- Return to saucepan.
- Add remaining milk, thyme, salt, pepper and nutmeg.
- Simmer 5 minutes.
- Serve hot.
