Ingredients

  • 1 cup Canola Oil
  • 2 cups Sugar
  • 2 whole Eggs
  • 1/4 teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 2 teaspoons Vanilla
  • 3 cups Flour
  • 3 cups Apples, Chopped Coarsely In A Blender
  • Powdered Sugar, For Dusting

Method

  • Cream together sugar and eggs.
  • Add salt, baking powder, cinnamon, vanilla to sugar and egg mixture. Add canola oil and mix well.
  • Add flour and apples and combine until smooth. Don't use a mixer, as this will break down the apples too much. You want there to be more than a suggestion of apples in the batter!
  • Prepare a tube pan with Baker's Joy and pour batter into the pan. Place in a 300-degree oven for approximately one hour or until a tester comes out clean.
  • Let the cake cool for 20 minutes in the pan; turn the pan upside down to remove the cake. Sprinkle the top of the cake with powdered sugar, and there you have it!
