Ingredients

  • 1 c. cooking oil
  • 2 eggs
  • 2 c. sugar
  • 1 tsp. soda
  • 2 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 c. pecans
  • 3 c. chopped apples
  • 1 (6 oz.) pkg. butterscotch chips

Method

  • In large bowl, mix oil, eggs and sugar well.
  • In separate bowl, sift flour, soda, salt, cinnamon and baking powder.
  • Add to first mixture.
  • Stir in nuts and apples; mix well.
  • Spread mixture in greased 13 x 9-inch pan.
  • Spread butterscotch chips on top of cake.
  • Bake at 350° for 55 minutes.
  • Cool and cut into squares. For best results, let stand 1 day.
