Ingredients
- 1 c. cooking oil
- 2 eggs
- 2 c. sugar
- 1 tsp. soda
- 2 1/2 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 c. pecans
- 3 c. chopped apples
- 1 (6 oz.) pkg. butterscotch chips
Method
- In large bowl, mix oil, eggs and sugar well.
- In separate bowl, sift flour, soda, salt, cinnamon and baking powder.
- Add to first mixture.
- Stir in nuts and apples; mix well.
- Spread mixture in greased 13 x 9-inch pan.
- Spread butterscotch chips on top of cake.
- Bake at 350° for 55 minutes.
- Cool and cut into squares. For best results, let stand 1 day.
