Ingredients

  • 4 medium potatoes
  • 3 Tbsp. onion, minced
  • 2 large potatoes, boiled
  • 1/2 c. sour cream
  • 1/2 c. butter
  • 1 Tbsp. snipped parsley
  • 1 c. Cheddar cheese, grated
  • salt
  • pepper

Method

  • Scrub the 4 potatoes, dry and coat with oil or fat. Wrap in foil. Bake at 350° for 1 hour and 30 minutes. Halve lengthwise. Scoop out insides; salt and pepper shells. Mash boiled potatoes with pulp of baked potatoes. Beat sour cream and butter with potatoes until fluffy; season. Stir in onions and parsley; stuff shells. Sprinkle with cheese. Return to oven until hot.
