Ingredients
- 4 medium potatoes
- 3 Tbsp. onion, minced
- 2 large potatoes, boiled
- 1/2 c. sour cream
- 1/2 c. butter
- 1 Tbsp. snipped parsley
- 1 c. Cheddar cheese, grated
- salt
- pepper
Method
- Scrub the 4 potatoes, dry and coat with oil or fat. Wrap in foil. Bake at 350° for 1 hour and 30 minutes. Halve lengthwise. Scoop out insides; salt and pepper shells. Mash boiled potatoes with pulp of baked potatoes. Beat sour cream and butter with potatoes until fluffy; season. Stir in onions and parsley; stuff shells. Sprinkle with cheese. Return to oven until hot.
