Ingredients

  • 1 lb. frozen, skinless flounder fillets, thawed
  • 1 1/2 c. boiling water
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 Tbsp. onion, finely chopped
  • 1/2 tsp. marjoram
  • 2 Tbsp. flour
  • 1 c. skim milk
  • 1/2 tsp. salt
  • dash of red pepper
  • 2 Tbsp. grated Parmesan cheese

Method

  • Place fish fillets in 1 cup boiling water.
  • Cook, uncovered, 2 minutes.
  • Drain.
  • Place spinach and onion in 1/2 cup boiling water.
  • Separate spinach with fork.
  • When water returns to boiling, cover and cook spinach 2 minutes.
  • Drain well.
  • Mix with marjoram.
