Ingredients

  • 1 lb Italian flat beans
  • 1 lb Golden Yukon potatoes
  • 1/4 cup Fresh parsley rough chop
  • 1/4 cup scallions chopped
  • 1/2 cup olive oil, extra virgin
  • 1 tbsp white vinegar
  • 1 tbsp Flat bean water

Method

  • Cook flat beans & Potatoes in separate pots of boiling water.
  • Cook potatoes u til fork tender & flat beans until tender.
  • Strain both & save a lol bit of the flat bean water.
  • Combine all the ingredients in a bowl & mix gently & serve room temperature or chilled.
