Ingredients
- 1 lb Italian flat beans
- 1 lb Golden Yukon potatoes
- 1/4 cup Fresh parsley rough chop
- 1/4 cup scallions chopped
- 1/2 cup olive oil, extra virgin
- 1 tbsp white vinegar
- 1 tbsp Flat bean water
Method
- Cook flat beans & Potatoes in separate pots of boiling water.
- Cook potatoes u til fork tender & flat beans until tender.
- Strain both & save a lol bit of the flat bean water.
- Combine all the ingredients in a bowl & mix gently & serve room temperature or chilled.
