Ingredients

  • 300g very fresh kingfish (or use sashimi-grade tuna or salmon)
  • 1 small orange, peeled and cut into 12 segments
  • 1 ruby grapefruit, peeled and cut into small pieces
  • 2 limes, peeled and cut into small pieces
  • 1 bunch dill
  • 2 radishes, washed, cut into discs and sliced into thin strips
  • 45ml olive oil
  • 15ml lemon juice
  • Pinch of sea salt

Method

Thinly slice the fish and arrange on four plates. Garnish each plate with the orange, grapefruit and lime, a few strands of dill and some radish strips. Mix the oil, lemon juice and salt in a bowl and pour over the fish. Serve immediately.
