Ingredients

  • 2 lb. smoked haddock
  • 1/4 c. butter
  • 2 Tbsp. flour
  • 1 3/4 c. milk
  • salt and pepper to taste
  • 3 Tbsp. butter, melted
  • 1/2 c. bread crumbs
  • 1 Tbsp. fresh parsley

Method

  • Preheat oven to 400°.
  • For thin white sauce, melt butter in saucepan, add flour and stir to form paste.
  • Remove from heat and slowly add 1/2 the milk.
  • Return to
  • heat and stir until thickened; beat until smooth.
  • Gradually stir in remaining milk and heat to simmering.
  • Place fish in greased casserole dish and pour white sauce over it.
  • Cover and bake at 400° for 10 to 20 minutes, until fish flakes easily.
  • Sprinkle with bread crumbs which have been mixed with melted butter.
  • Return to oven and bake 5 to 10 minutes, until golden.
  • Sprinkle with parsley and garnish with lemon wedges.
