Ingredients
- 2 lb. smoked haddock
- 1/4 c. butter
- 2 Tbsp. flour
- 1 3/4 c. milk
- salt and pepper to taste
- 3 Tbsp. butter, melted
- 1/2 c. bread crumbs
- 1 Tbsp. fresh parsley
Method
- Preheat oven to 400°.
- For thin white sauce, melt butter in saucepan, add flour and stir to form paste.
- Remove from heat and slowly add 1/2 the milk.
- Return to
- heat and stir until thickened; beat until smooth.
- Gradually stir in remaining milk and heat to simmering.
- Place fish in greased casserole dish and pour white sauce over it.
- Cover and bake at 400° for 10 to 20 minutes, until fish flakes easily.
- Sprinkle with bread crumbs which have been mixed with melted butter.
- Return to oven and bake 5 to 10 minutes, until golden.
- Sprinkle with parsley and garnish with lemon wedges.
