Ingredients

  • 1/4 c. margarine, softened
  • 1/4 c. sugar
  • 1 egg
  • 1/2 c. light corn syrup
  • 1/2 c. water
  • 2 c. all-purpose flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. soda
  • 1 c. cooked figs, drained and chopped
  • 3/4 c. bread crumbs

Method

  • Cream margarine and sugar until light and fluffy.
  • Add egg and corn syrup and mix well.
  • Blend in water, flour, baking powder, salt, cinnamon, ginger and soda.
  • Add figs, mixing gently; stir in bread crumbs.
  • Fill greased muffin pans 2/3 full.
  • Bake at 350° for 15 to 20 minutes.
  • Yields 12 muffins.
