Ingredients

  • 2 1/3 cups dried figs chopped
  • 1 cup raisins
  • 2/3 cup pecans
  • 1/4 cup honey
  • 1 lemon zested and juiced
  • cookies
  • 1/2 cup butter chopped
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup all purpose flour
  • 2/3 cup cornstarch
  • 1 teaspoon baking powder
  • 1 tablespoon milk
  • powdered sugar for dusting

Method

  • In a food processor, combine figs, raisins, pecans, honey, lemon zest and lemon juice. Process with 1 tbsp water to make a spreadable consistency. Set aside.
  • Cream butter, sugar and vanilla together until light and fluffy. Beat in egg. Sift together flour, cornstarch and baking powder then fold in along with enough milk to form a soft dough. Wrap in plastic wrap. Chill for 30 mins.
  • Preheat oven to 350°F. Lightly grease and line a 7x11 inch rimmed baking pan with parchment paper. Roll out 1/2 the dough and use to line prepared pan. Fill baking pan with filling. Roll out remaining dough and press over filling. Bake for 30-35 mins, until golden. Let cool in pan.
  • Cut into squares. Serve dusted with powdered sugar.
