Ingredients

  • For meatloaf:
  • 1 1/2 pounds of ground beef
  • 1/3 cup plain bread crumbs
  • 1 small onion
  • 1 egg
  • 2 Tbs spicy mustard
  • 1Tbs coriander
  • 1 clove minced garlic
  • 1Tbs cumin
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste
  • (optional 1/4 cup finely diced mushrooms)
  • For glaze:
  • 1/3 cup ketchup
  • 1/3 cup brown sugar
  • 2tsp white wine vinegar

Method

  • 1. Pre-heat oven to 350 degrees. In small pan saute diced onion with oil salt and pepper until translucent. allow to cool and set aside.
  • 2. in a large bowl mix together meat with all other meatloaf ingredients including cooled sauteed onions. Do not over mix, use hands or rubber spatula.
  • 3. In a separate small bowl mix ketchup, brown sugar, and vinegar.
  • 4. Place meat mixture into loaf pan. Spoon on half of the glaze mixture. Cover meatloaf with foil bake covered for 20-30 minutes.
  • remove from over spoon over other half of glaze. bake uncovered for additional 15-20 minutes. bake until meat thermometer is at correct temp for ground beef. 160 degrees?
