Ingredients

  • 1 whole chicken, cut up
  • 4 c. celery
  • 6 c. potatoes
  • 3 c. carrots
  • 2 onions, chopped
  • Parmesan cheese, finely grated
  • crushed garlic
  • salt and pepper to taste
  • your favorite pasta
  • corn kernels
  • potatoes, chopped

Method

  • Put the first five ingredients in a soup pot; add enough water to cover.
  • Bring to a boil; lower heat and cook for 1 to 2 hours. Remove chicken from pot and place in a bowl to cool; set aside. Puree in a blender the remaining broth and cooked vegetables.
  • Add to taste Parmesan cheese, garlic, salt and pepper.
  • Remove chicken from bones and cut into bite-size pieces; add to pureed broth.
  • In separate saucepans, cook the pasta, corn and potatoes.
