- 1 whole chicken, cut up
- 4 c. celery
- 6 c. potatoes
- 3 c. carrots
- 2 onions, chopped
- Parmesan cheese, finely grated
- crushed garlic
- salt and pepper to taste
- your favorite pasta
- corn kernels
- potatoes, chopped
Method
- Put the first five ingredients in a soup pot; add enough water to cover.
- Bring to a boil; lower heat and cook for 1 to 2 hours. Remove chicken from pot and place in a bowl to cool; set aside. Puree in a blender the remaining broth and cooked vegetables.
- Add to taste Parmesan cheese, garlic, salt and pepper.
- Remove chicken from bones and cut into bite-size pieces; add to pureed broth.
- In separate saucepans, cook the pasta, corn and potatoes.
