Ingredients

  • 4 c. dried chickpeas
  • 2 large onions, finely chopped
  • 1 head garlic, finely chopped
  • 2 bunches parsley, finely chopped
  • 2 tsp. cumin
  • salt to taste
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda

Method

  • Soak chickpeas overnight.
  • Drain.
  • Combine peas, onions, garlic, parsley.
  • Grind with meat grinder or beat until almost creamy.
  • Add salt, cumin and baking powder.
  • Mix thoroughly.
  • When ready to fry, mix in baking soda.
  • Shape into small patties.
  • Fry in deep hot oil (electric wok works well) until light brown and crisp.
  • Serve hot with fresh tomato slices and lettuce leaves and sliced onions in pita bread.
