Ingredients
- 4 c. dried chickpeas
- 2 large onions, finely chopped
- 1 head garlic, finely chopped
- 2 bunches parsley, finely chopped
- 2 tsp. cumin
- salt to taste
- 1 tsp. baking powder
- 1/4 tsp. baking soda
Method
- Soak chickpeas overnight.
- Drain.
- Combine peas, onions, garlic, parsley.
- Grind with meat grinder or beat until almost creamy.
- Add salt, cumin and baking powder.
- Mix thoroughly.
- When ready to fry, mix in baking soda.
- Shape into small patties.
- Fry in deep hot oil (electric wok works well) until light brown and crisp.
- Serve hot with fresh tomato slices and lettuce leaves and sliced onions in pita bread.
