Ingredients

  • 100 g (3.5oz) heads of elderflower (25 heads approx)
  • 2 lemons, peelings removed, and sliced
  • 1 kg (2.2lbs) sugar
  • 550 ml (19.4fl oz) water
  • 40 g (1.4oz) citric acid

Method

  • Heat the water and sugar together, add the citric acid and bring to the boil.
  • Pour onto the Elderflower heads, the sliced lemons and the lemon peelings.
  • Stir well, and cover with cling film.
  • Keep refrigerated for 4 days and then strain.
  • Vac pack the liquid.
  • For best results, dilute with sparkling water or prosecco, lemon slices and fresh mint.
