Ingredients
- 3 medium eggplants
- 1 c. milk
- 1 egg
- 1 pkg. Mozzarella cheese
- 1 (16 oz.) carton Ricotta cheese or cottage cheese
- 1 pkg. grated Parmesan cheese
Method
- Peel eggplants and cut into round slices (about 1/8-inch thick). Dip in milk and egg batter, then dip in flour and fry until brown. Drain on paper towels.
