Ingredients
- 1 large eggplant
- 1/2 c. cream of mushroom soup
- 1/2 c. mayonnaise
- 1 egg, beaten
- 1 onion, chopped
- 3/4 c. Ritz crackers, crushed
- 1 c. Cheddar cheese, grated
Method
- Peel, cube and cook eggplant; drain and mash.
- Mix with soup, egg, onion, mayonnaise, 1/2 of cheese and 1/2 of cracker crumbs. Pour in buttered 2-quart casserole dish.
- Top with remaining cheese and cracker crumbs.
- Bake at 350° for 35 minutes.
