Ingredients

  • 1 eggplant
  • 2 eggs, beaten
  • 1/2 stick margarine
  • 1 c. cracker crumbs
  • 1 green pepper, diced
  • 2 pimentos, diced
  • 1 large onion, diced
  • 2 c. chopped tomatoes
  • 1 c. grated cheese
  • salt and pepper to taste
  • 1/2 c. grated sharp cheese (optional)

Method

  • Pare eggplant and cut in 1-inch cubes. Cook in boiling salt water
  • for 10 minutes and drain.
  • Add next 8 ingredients and mix well.
  • Add seasonings.
  • Pour in greased baking dish. Sprinkle with
  • sharp Cheddar cheese.
  • Bake at 350° for 1 hour. Yields 8 servings.
