- 1 eggplant
- 2 eggs, beaten
- 1/2 stick margarine
- 1 c. cracker crumbs
- 1 green pepper, diced
- 2 pimentos, diced
- 1 large onion, diced
- 2 c. chopped tomatoes
- 1 c. grated cheese
- salt and pepper to taste
- 1/2 c. grated sharp cheese (optional)
Method
- Pare eggplant and cut in 1-inch cubes. Cook in boiling salt water
- for 10 minutes and drain.
- Add next 8 ingredients and mix well.
- Add seasonings.
- Pour in greased baking dish. Sprinkle with
- sharp Cheddar cheese.
- Bake at 350° for 1 hour. Yields 8 servings.
