Ingredients
- 1 lb. russet potatoes (about 3 medium), peeled, cubed (about 3-1/2 cups) Safeway 2 pkg For $5.00 thru 02/09
- 6 slices bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 1/2 of a medium red pepper, chopped
- 1 small onion, chopped
- 6 eggs
- 1 cup Cracker Barrel Shredded Double Cheddar Cheese
Method
- Place potatoes in large saucepan; cover with water.
- Bring to boil; continue boiling 5 minutes.
- Drain well and set aside.
- Cook bacon in large frying pan on medium-high heat.
- Remove from frying pan; drain on paper towels.
- Wipe out frying pan with paper towel.
- Add peppers and onions to pan.
- Reduce heat to medium; cook and stir 3 minutes.
- Add potatoes; cook an additional 15 minutes, stirring occasionally.
- Make 6 small wells in potato mixture.
- Add 1 egg to each well; sprinkle evenly with bacon and cheese.
- Cover pan with lid.
- Cook 5 to 8 minutes or until eggs are set.
