Ingredients

  • 1 lb. russet potatoes (about 3 medium), peeled, cubed (about 3-1/2 cups) Safeway 2 pkg For $5.00 thru 02/09
  • 6 slices bacon, chopped Rite Aid 2 For $7.00 thru 02/06
  • 1/2 of a medium red pepper, chopped
  • 1 small onion, chopped
  • 6 eggs
  • 1 cup Cracker Barrel Shredded Double Cheddar Cheese

Method

  • Place potatoes in large saucepan; cover with water.
  • Bring to boil; continue boiling 5 minutes.
  • Drain well and set aside.
  • Cook bacon in large frying pan on medium-high heat.
  • Remove from frying pan; drain on paper towels.
  • Wipe out frying pan with paper towel.
  • Add peppers and onions to pan.
  • Reduce heat to medium; cook and stir 3 minutes.
  • Add potatoes; cook an additional 15 minutes, stirring occasionally.
  • Make 6 small wells in potato mixture.
  • Add 1 egg to each well; sprinkle evenly with bacon and cheese.
  • Cover pan with lid.
  • Cook 5 to 8 minutes or until eggs are set.
