Ingredients
- 1 refrigerated pie crust
- 3/4 c. sugar
- 1 1/2 tsp. pumpkin pie spice
- 1/2 tsp. salt
- 1 (15 oz.) can pumpkin
- 1 1/2 c. evaporated milk
- 2 eggs, beaten
Method
- Heat oven to 425°. Put pie crust in 9-inch pan as directed. In large bowl, combine ingredients. Pour into pan. Bake 15 minutes. Reduce oven temperature to 350°. Bake 40 or 50 minutes more, until knife inserted in center comes out clean. Store in refrigerator. Serve with Cool Whip.
