Ingredients

  • 1 refrigerated pie crust
  • 3/4 c. sugar
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 1 (15 oz.) can pumpkin
  • 1 1/2 c. evaporated milk
  • 2 eggs, beaten

Method

  • Heat oven to 425°. Put pie crust in 9-inch pan as directed. In large bowl, combine ingredients. Pour into pan. Bake 15 minutes. Reduce oven temperature to 350°. Bake 40 or 50 minutes more, until knife inserted in center comes out clean. Store in refrigerator. Serve with Cool Whip.
