Ingredients

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 2 tablespoons white sugar
  • 1/2 cup pumpkin pure unsweetened
  • 1 cup low fat buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons baking powder

Method

  • Preheat the oven to 325°F. Lightly grease a baking sheets, set aside.
  • Combine the flours with the sugar, baking powder, the salt and the baking soda. In another bowl combine the pumpkin pure with the buttermilk, then stir in the flour mixture. Drop by tablespoonfuls onto the greased baking sheets, flat the cookies with the back of the spoon. Sprinkle with some extra white sugar. Bake in the preheated oven about 25-30 minutes.
