Ingredients
- 2 cups peeled and diced very ripe mangoes (about 2 mangoes)
- 1 teaspoon light brown sugar (if you'd like it very sweet, you can add more)
- 1 cup low-fat vanilla ice cream
- 1/2 cup cold nonfat milk
- 1 sprig of fresh mint (optional)
Method
- Place mangoes and brown sugar in blender or food proccessor; cover. Process to make a thick puree.
- Add ice cream and milk; blend again. Serve in parfait glasses, garnished with mint sprigs, if desired.
