Ingredients

  • 4 ounces, weight Penne
  • 1 Tablespoon Grated Parmigiano Reggiano, Plus More To Serve
  • 1 slice Lemon
  • 1 teaspoon Extra Virgin Olive Oil
  • 2 pinches Thyme, To Taste
  • Kosher Salt And Black Pepper

Method

  • This is an excellent quick and (relatively) healthy lunch or dinner, and its especially handy when youre cooking for one!
  • Quantities can easily be doubled, quadrupled, etc., if you want to make it for a crowd.
  • 1) Prepare penne according to package directions.
  • 2) While penne is cooking, grate a generous tablespoon of parmigiano reggiano.
  • I use the side of the box grater with the big holes because I like it that way, but you can grate it however you want!
  • 3) When the pasta is done cooking, drain and put into an individual serving bowl.
  • Squeeze a wedge of lemon over the pasta.
  • Drizzle pasta with olive oil, then add a sprinkle of thyme and kosher salt and pepper to taste (I suggest generous amounts of both!).
  • Mix to combine.
  • 4) Top with more grated parmigiano and, if you prefer, mix that in as well.
  • Enjoy!
