Ingredients
- 1 (3 oz.) pkg. lemon jello
- 2 Tbsp. lemon juice
- 2 c. ice cubes
- 1 graham cracker pie crust
- 2/3 c. boiling water
- 2 tsp. grated lemon rind (optional)
- 1 (8 oz.) container Cool Whip
Method
- Dissolve gelatin completely in boiling water, stirring 3 minutes.
- Add lemon juice, rind and ice cubes and stir constantly until thickened, about 2 to 3 minutes.
- Remove any unmelted ice. With whisk, blend in Cool Whip; whip until smooth.
- Chill if necessary until mixture mounds.
- Spoon into pie crust.
- Chill 2 hours or until firm.
- Garnish as desired.
