Ingredients

  • 1 (3 oz.) pkg. lemon jello
  • 2 Tbsp. lemon juice
  • 2 c. ice cubes
  • 1 graham cracker pie crust
  • 2/3 c. boiling water
  • 2 tsp. grated lemon rind (optional)
  • 1 (8 oz.) container Cool Whip

Method

  • Dissolve gelatin completely in boiling water, stirring 3 minutes.
  • Add lemon juice, rind and ice cubes and stir constantly until thickened, about 2 to 3 minutes.
  • Remove any unmelted ice. With whisk, blend in Cool Whip; whip until smooth.
  • Chill if necessary until mixture mounds.
  • Spoon into pie crust.
  • Chill 2 hours or until firm.
  • Garnish as desired.
