Ingredients
- 1 c. sliced green onions with tops
- 1 medium garlic clove, crushed (optional)
- 1 Tbsp. oil
- 4 c. chicken broth
- 1 c. milk or half and half
- 1 pkg. (4 serving size) instant mashed potatoes
- 1 medium carrot, shredded coarse
- fresh ground pepper to taste
- minced green parsley (optional)
Method
- In medium saucepan over medium heat, saute onions and garlic in oil, stirring occasionally, for 5 minutes or until onions are wilted.
- Add broth; bring to rolling boil.
- Remove from heat; stir in milk, potatoes and carrot.
- Cook until just thoroughly heated.
- Season with pepper, sprinkle with parsley.
- Makes 4 servings.
