Ingredients

  • 1 c. sliced green onions with tops
  • 1 medium garlic clove, crushed (optional)
  • 1 Tbsp. oil
  • 4 c. chicken broth
  • 1 c. milk or half and half
  • 1 pkg. (4 serving size) instant mashed potatoes
  • 1 medium carrot, shredded coarse
  • fresh ground pepper to taste
  • minced green parsley (optional)

Method

  • In medium saucepan over medium heat, saute onions and garlic in oil, stirring occasionally, for 5 minutes or until onions are wilted.
  • Add broth; bring to rolling boil.
  • Remove from heat; stir in milk, potatoes and carrot.
  • Cook until just thoroughly heated.
  • Season with pepper, sprinkle with parsley.
  • Makes 4 servings.
