Ingredients
- 1 12 lbs medium potatoes, cut into eights or 1 12 lbs mini potatoes, halved
- 12 cup olive oil
- 14 cup french's Dijon mustard
- 1 tablespoon dried oregano, basil or 1 tablespoon rosemary, leaves
- salt and pepper
Method
- Place potatoes in a large baking dish or roasting pan.
- Combine remaining ingredients.
- Drizzle over potatoes.
- Toss to coat.
- Bake at 424F for 30-40 minutes, stirring often, until potatoes are tender.
