Ingredients

  • 1 1/4 c. salad dressing
  • 1 pkg. yellow cake mix
  • 4 whole eggs
  • 1/4 c. cold water
  • 2 c. finely shredded carrots
  • 1 c. chopped walnuts
  • 2 tsp. cinnamon

Method

  • Add cinnamon to cake mix.
  • Beat salad dressing, cake mix, cinnamon, eggs and water at medium speed until well blended.
  • Stir in shredded carrots and nuts.
  • Mix well, but do not beat.
  • Pour into 9 x 13-inch pan, which has been greased and lightly floured. Bake 30 to 35 minutes in 350° oven or until tested done when touched lightly with fingers.
  • Cool completely before icing with your favorite icing.
