Ingredients

  • 1 packages Beef smoked sausage
  • 1 packages Extra broad eggs noodles
  • 1 can Rotel diced tomatoes - original
  • 8 oz Sour cream
  • 1 pinch Cajun/Creole seasoning

Method

  • Slice sausage and brown in a skillet.
  • In a stew pot, boil water with pinch of salt.
  • Once boiling add egg noodles and cook just shy of al dente and drain.
  • Lower flame from stew pot to med/low.
  • Add the sausage and Rotel tomatoes.
  • Return noodles to the stew pot and add sour cream and cajun seasoning.
  • Cook another 3-5 minutes until warmed thru.
  • Serve and add more seasoning to taste.
