Ingredients
- 2 (1/4 oz.) envelopes active dry yeast
- 1/8 tsp. salt
- 4 1/2 c. all-purpose flour plus additional for kneading
- 1/4 c. warm milk
- 1 egg yolk
- 1/4 c. lukewarm water
- 3/4 c. plus 1 tsp. granulated sugar
- 8 eggs, at room temperature (3 lightly beaten, 5 in the shell, colored, if desired)
- 1 (4 oz.) stick unsalted butter, melted
Method
- In a small bowl, combine the yeast, water, salt and 1 teaspoon of the sugar.
- Set aside until foamy, about 5 minutes.
- In a large bowl, stir 4 1/2 cups of the flour and the remaining 3/4 cup sugar with a whisk to combine.
- Make a well in the center of the dry ingredients.
