Ingredients

  • 2 (1/4 oz.) envelopes active dry yeast
  • 1/8 tsp. salt
  • 4 1/2 c. all-purpose flour plus additional for kneading
  • 1/4 c. warm milk
  • 1 egg yolk
  • 1/4 c. lukewarm water
  • 3/4 c. plus 1 tsp. granulated sugar
  • 8 eggs, at room temperature (3 lightly beaten, 5 in the shell, colored, if desired)
  • 1 (4 oz.) stick unsalted butter, melted

Method

  • In a small bowl, combine the yeast, water, salt and 1 teaspoon of the sugar.
  • Set aside until foamy, about 5 minutes.
  • In a large bowl, stir 4 1/2 cups of the flour and the remaining 3/4 cup sugar with a whisk to combine.
  • Make a well in the center of the dry ingredients.
