Ingredients
- 1 1/2 c. cool mashed potatoes
- 1 tbsp. butter
- 1 teaspoon chopped parsley
- 2 teaspoon cream
- 1/2 teaspoon salt
- 1/2 teaspoon chopped onion
- 1 egg, separated
- Pepper
- Cornmeal
Method
- Make a paste with the potato, butter, salt, pepper, cream, onion, egg yolk and parsley.
- Mold into patties, dip into beaten egg whites, roll in cornmeal and fry till crisp.
