Ingredients

  • 1 c. chopped dates
  • 1 c. golden raisins
  • 3/4 c. dry sherry
  • 1/2 tsp. baking powder
  • 1 c. each: chopped pecans and sa/pistachios
  • 3 eggs
  • 1 c. chopped dried apricots
  • 1 c. chopped figs
  • 3/4 c. each: flour and sugar
  • 1 c. slivered almonds
  • 1/2 c. chopped crystallized ginger
  • 1/2 tsp. almond extract

Method

  • Butter a 5 x 9-inch loaf pan lined with parchment or wax paper.
  • Combine dates, apricots, raisins, figs, 1 tablespoon minced fresh ginger and 1/2 cup sherry.
  • Mix well and let stand 30 minutes.
  • Then stir together flour, sugar, baking powder, almonds, pecans, pistachios and crystallized ginger.
  • Beat together eggs and almond extract.
  • Add egg and nut mixtures to fruit evenly. Bake in 300° oven until top is golden brown, about 1 1/2 hours.
